Red Currant and Banana Marmelade
Most gardens in a cold climate have red currant bushes! This is a plant that will grow without much care and produce berries for you each year. The main question often turns into: “What do I do with all the red currants?”!
One tip from me ist to make red currant and banana marmelade!
This is a receipe my grandmother first introduced me to, and I have been making it as an alternative to plain red currant marmelade for years.
This marmelade is intended for freezing and does not require any cooking or heat treatment.
Ingredients:
- 1 kg red currant
- 260 g peeled bananas
- 300 g sugar
Directions:
Pick and wash the red currant. Peel the bananas and use a fork to smash them into a porridge consistency. Add the bananas and the sugare to the berries. Blend carefully untill the suggare has dissolved and everything is well mixed.
I use a hand mixer for this and then i use a stick mixer for a few secounds at the end of the process to break up some more of the berries.

This marmelade does not have any freezing powder in it. If you want it a little less runny, you can add your favourite freezing powder to the mix.
Pour the marmelade in clean glasses. Remember to leave a little head space for expansion during freezing. (If you fill all the way up, the glasses will break.) Wipe down the glasses, mark them with the name and year and pop them in the freezer.
This red current and bananan marmelade will keep for up to a year in the freezer. After you defrost a glass it will keep for 3-4 days in the fridge.
